Grilled Shrimp with Quick Smoky Marinade
This delicious marinade is quick to throw together and can easily be used for shrimp or chicken thigh. Marinate for 30 minutes or for several hours - it is tasty either way. Pair with a seasonal veggie or two and you've got a quick dinner on the table in no time.

- 2 lbs medium raw shrimp, peeled, deveined, tails removed and pat dry
- 2 tbsp lemon juice
- ¼ cup extra virgin olive oil
- 5 garlic cloves, minced
- 1 tbsp fresh parsley, minced 1 tsp of dried parsley or Italian seasoning works great, too
- 2 tsp smoked paprika
- ½ tsp sea salt
- pinch red pepper flakes
Add all ingredients except the shrimp to a medium sized glass bowl and whisk until emulsified. Add the shrimp and gently toss until well coated. Cover and refrigerate for 30 minutes or up to a few hours.
Thread the shrimp on skewers, leaving the excess marinade to drip back into the bowl. Grill over medium heat until cooked through, about 2-3 minutes per side.
