Orange Ginger Yogurt with Berries and Granola

This yogurt bowl is a delightful breakfast that will keep you satiated until lunch. High in protein, plain Greek yogurt can be dressed up and flavored with a lot less sugar than anything you can find on the grocery store shelf. Toss on some nutritious and fiber-rich berries and top with toasted walnuts or low-sugar granola that has a high ratio of nuts and seeds.

Ingredients

  • ¾ cup plain, whole milk Greek yogurt
  • 1 orange, zested and juiced
  • 1 tsp maple syrup
  • 1 tsp minced crystallized ginger
  • ¼ tsp vanilla extract
  • pinch of sea salt
  • Serve with: berries and granola or toasted walnuts

Instructions

  • In a small bowl, combine the yogurt, about 1 tsp of orange zest, 2 tbsp of orange juice, maple syrup, vanilla and ginger.
  • Top with berries and granola or toasted walnuts.

Notes

* I also enjoy this recipe without the maple syrup and just drizzle on a bit of local honey on top - try both ways to see what you prefer.  I don't recommend, however, mixing the yogurt with honey as it just clumps together.
