  • ¼ cup reduced sodium soy sauce use tamari for gluten-free option
  • 2 tsp toasted sesame oil
  • 1 tbsp rice wine vinegar
  • 2 tsp fresh minced ginger or 2 cubes of frozen ginger from Trader Joe's
  • 2 tsp fresh minced garlic or 2 cubes of frozen garlic from Trader Joe's
  • pinch red pepper flakes

Instructions

  • Add all ingredients except the chicken to a large bowl and whisk together. Add the chicken and flip to coat. Cover and refrigerate for 1 hour or overnight.

Roast for about 40 minutes, turning the chicken over mid-way. You're looking for chicken that is crispy in spots and the internal temperature reads about 180 ℉ for tender and juicy thighs.
