Spa Crunch Salad

My friend Lisa is the queen of salads.  When she offers to bring a salad to your house to go with your meal, you can always bet on a crunchy mix of all the things and it will be served in the biggest bowl IKEA makes. They are so good.

Recently, at an annual Christmas brunch with dear friends, she brought one of her famed crunchy salads. Amongst all the delicious brunch fare of delicious egg dishes, roasted potatoes, coffee cakes, scones, fruit, and piles of bacon was this salad.  I went back for seconds, so yum.

Forward a week or so and I was still craving this salad.  I knew it was time to recreate this “recipe” and put my own spin on it.  I have eaten it two days in a row now and each time I feel like I’m doing my body such a favor by eating all these healthy, crunchy, satisfying vegetables and seeds.  Today, I had an actual birthday spa day and upon coming home from my blissful spa experience, I promptly threw together this salad – it definitely made me feel like I was still at the spa.  What a nice gift to give myself. Thanks Lisa for the inspiration!

Spa Crunch Salad

So much crunch in this salad! Perfect to prep all the ingredients ahead of time and throw together for a quick lunch. The vinaigrette makes enough for several salads.

Ingredients

Vinaigrette

  • ½ cup + 3 tsp extra virgin olive oil
  • 3 tbsp Champagne, red wine or sherry vinegar
  • ½ tsp honey
  • ½ tsp sea salt
  • ¼ tsp freshly ground black pepper

Salad for One

  • 2 cups arugula or mix of arugula/spinach, chopped
  • 1 head endive, chopped
  • 1 celery rib, chopped
  • ¼ cup chopped fennel
  • ¼ cup chopped jicama
  • 2 tbsp pomegranate seeds
  • 2 tbsp pepitas
  • 1 tbsp crumbled goat cheese
  • 1 scallion, chopped
  • ¼ cup garbanzo beans, rinsed and drained optional for added protein and fiber

Instructions

  • Add all salad ingredients to a bowl and toss with just enough vinaigrette to coat.
