Last week’s meal plan gave us plenty of good food throughout the week, along with tasty leftovers for lunch. I hope you had a chance to try the Chicken Larb recipe—it was a hit with my family! While I’m already brainstorming ways to bump up the nutritional content of that simple recipe, I must say, making it as written was absolutely delicious, and I highly recommend it.

Planning Ahead for a Busy Week

This week is especially busy, with cooking events scheduled at both the start and end of the week. That means my refrigerators are overflowing with extra food, leaving little space for meal prep that actually feeds my family during this hectic time. I’ve written about this before, but weeks like this are when we do a few things to help calm the crazy:  1) lean on our freezer for soups and mains that were made-ahead, doubled and frozen 2) pick up a rotisserie chicken for an easy main salad 3) plan for pizza delivery—not the kind that happens out of dinner desperation, but the kind that is planned and savored.

We order from our favorite local woodfire pizzeria, which not only offers amazing pizza but also delicious Caesar and Italian chopped salads. Everyone is happy and dishes are minimal.  It’s the perfect way to take a break from the kitchen while still enjoying a wholesome, satisfying meal.

A freezer staple in the fall and winter months, I’m thankful to have made a batch of this and stashed it away for a busy week. Also, with such busy schedules it seems prudent to keep up our immune systems in tip top shape!

I like to make these on busy weeks because they are excellent to make-ahead earlier in the day and kept in the refrigerator until ready to bake. It is also a handy recipe because mostly pantry and refrigerator staples are used, making this an easy recipe to keep in my back pocket if I haven’t made it to the store.

Mixed Green with Roasted Chicken, Figs and Shallot Vinaigrette
A salad that just shouts fall! Figs are in abundance right now and the season is short. I like to use them in salads and for any figs that get too ripe, I make a simple compote using honey and rosemary – a tasty spread with cheese and crackers.

Easy Frittata Recipe
A lifesaver recipe if there ever was one. Perfect for refrigerator cleanouts and a simple dinner during a crazy week. A side salad is a nice addition but so is a side of bacon and toast.
