Anyone that’s been a reader here for a while knows I’ve been keeping written meal plans for a long time – on a dry erase board since 2001, the year I was married and on paper calendars since July 2008. That’s a long time! And this little blog has been in existence since 2016 where I began blogging about the benefits (necessity?) of meal planning.
More recently I’ve shared my meal plans on Instagram but truthfully, it’s never my favorite place to share these. Links are hard, the format is tricky, etc. I finally begged my favorite IT guy- my hubs- to help get my blog set up with a meal planning category (sorry about the earlier test email inadvertently sending!). I’m thrilled to be able to finally share my meal plans here – something I’ve wanted to do for a long time. My hope is that they serve as weekly inspiration for you and take some of the workload off your plate. As always, you’ll find a collection of my own recipes and links to recipes I use from other sites. More home cooked meals is and always has been my motivation to share. I hope you enjoy it!

Meal plan -week of December 11th, 2023
There’s no doubt your calendar this week is a little full like mine – that’s December for you! Between a parent Christmas party for the boys’ high school, a private party work event, the usual sports, doctor appts and car servicing to a quick trip out of town for a little family gathering – it’s undoubtedly a busy week. It’s these weeks that I am even more motivated to plan meals ahead… not only dinner so we aren’t scrambling each evening, but even a few things for a quick breakfast so everyone begins the day with some nourishment.
The highlight for the week is having my daughter come home from college! I cannot wait to feed her healthy and comforting food after tons of hard studying and many recent bouts of sickness. College and dorm life are tough on the immune system and my goal is to help build hers up over the next many weeks – one happy mama over here who is up to the challenge.
Here’s what I have on tap this week:
Southwest Chicken and Vegetable Soup
Curry-Spiced Chickpea Burgers with Yogurt Sauce + Spiced Cauliflower + Arugula Salad
Baked Turkey Meatball Sub on Garlic Bread + Broccoli
Slow Cooker Chipotle-Honey Chicken Tacos (I use the recipe on NYT Cooking- paywall blocked but please reach out if you’d like some tips making this recipe) + Black Beans
