First off, thank you so much for all the kind words and feedback on my first wordy post! I promise to keep things more concise from here on out. Many of you mentioned how easy it is to get stuck in the same dinner rotation week after week—trust me, I get it. Everyone, including me, needs some fresh recipes now and then to keep things exciting in the kitchen.
We just got back from a wonderful vacation in beautiful Lake Tahoe, where we did a mix of eating out and cooking in (yes, even on vacation, I had a meal plan scribbled on a piece of paper!). Like all good vacations, we indulged in plenty of delicious snacks, meals, and drinks, including some memorable vodka mint cocktails and wine. But now that we’re back home, it feels good to return to healthy meals and cut back on those tasty beverages—at least until Friday!
Below are the recipes that are on my meal plan for this week. You’ll see five recipes in total—one day is dedicated to leftovers, and another will be date night (thanks, Nano, for babysitting the kids!). Fortunately, this isn’t a super busy week for me, so I have extra time to cook. But during typical busy school weeks, you might find a simpler plan with a few more go-to options like taco bars, egg scrambles, or something quick from Trader Joe’s. Every week looks different, but since I’m home from vacation and feeling recharged, I’m excited to spend more time in the kitchen. If you try any of these recipes, I’d love to hear how they turned out for you. These recipes are tried and true favorites in our house, and I’m excited to share them with you!
Curry-Spiced Chickpea Burgers with Yogurt Sauce
This vegetarian recipe is a long-time favorite. I was inspired after watching a cooking show by Martha Stewart years ago, and it’s been a staple ever since. You can find my full recipe here. I usually serve these veggie burgers on top of mixed greens with vinaigrette for a light and flavorful dinner.
Pro tip: I always double the recipe and freeze half of the uncooked burgers for another day. It’s a great time-saver!
Greek Chicken in Pita
This Greek chicken recipe is on heavy rotation in our house because it’s so easy and delicious! Find the full recipe here. I use boneless, skinless chicken thighs instead of a whole chicken, marinate them the day before or the morning of, and then grill. We either serve the chicken in warm pita bread or on top of a bed of romaine lettuce with Greek vinaigrette, tomatoes, cucumber, hummus, and a drizzle of Sriracha.
Don’t forget the tzatziki sauce! Mix Greek yogurt, grated cucumber, garlic, lemon zest and juice, dried dill, salt, and pepper for a delicious and tangy addition that makes this meal complete.
Grilled Salmon with Lime Butter
Grilled salmon is a weeknight staple in our house because it’s easy, healthy, and a family favorite. The recipe is available here. I grill the salmon on foil with a bit of olive oil, garlic salt, and pepper. The lime butter sauce is a delicious touch, but if I’m pressed for time, I skip it, and the salmon is still fantastic. This week, I’m serving it with roasted sweet potatoes and couscous.
Aromatic Noodles with Lime Peanut Sauce
This recipe is another family favorite, especially for busy nights when we’re on the go. You can find the recipe here. I make it as directed, and we’ve even been known to eat it out of disposable bowls on the way to evening sports activities—classy, right?! Just a tip: add the sauce as needed so it doesn’t get too saucy if you have a lot of veggies.
Chinese Chicken Lettuce Wraps
These Chinese chicken lettuce wraps are a hit in our house, and one of my kids even requested them for their birthday dinner! Check out the recipe here. I like to make a few tweaks, such as draining some of the chicken liquid after cooking to make the wraps less messy and omitting the mushrooms to cater to picky eaters. I also add shredded carrots, diced zucchini, and extra hoisin sauce for added flavor. Top the wraps with chopped cilantro, peanuts or cashews, and a dash of Sriracha for the perfect bite.
