Meal Plan // Week of January 22, 2024

Busy busy weeks call for easy recipes! After taking a wonderful trip to Mexico City last week and then being thrown back into busy life, I appreciate the habit of meal planning more than ever.  This week I’ve got several easy and flavorful recipes to get us through most of the week ahead. I hope you try one of them and enjoy as much as we do!

Roasted Grass-fed Meatballs – a freezer staple for us.  I am making a new batch and freezing half for another day.  Serving these with sauce and a pile of steamed broccoli or roasted brussels sprouts is my favorite way to eat them.  My kids enjoy tucking these into garlic bread and making a sandwich out of it.  Broccoli on the side, of course.

BBQ Sweet Potato Chickpea Tacos – I absolutely love the flavor combo or smoky, spicy with a hint of sweetness.  This is a trusted website I use frequently and I don’t have to look long before I find something new and interesting to make.  I followed the directions as written (except for doubling the spices and sweet potatoes) and served the taco filling inside a blistered Siete Almond Flour tortilla.  Delicious! My kids even enjoyed it. Sliced avocado would be a nice addition. 

Noodle-Free Chicken Pad Thai- Inspired – Trying this new recipe! I love skillet meals and so does my family.  They are easy to prepare ahead of time – makes it easy to all serve ourselves when we are hungry or scoop some and put it in a warm thermos for a healthy meal on the go.  Serve plain, over steamed rice or on a pile of chopped greens.  

Chicken Rice Immune Boosting Soup – This is my new favorite feel good soup. Based off a “flu bomb” drink recipe my friend gave me, I turned it into a delicious and nourishing bowl of soup. Made in an Instant Pot, it is a simple, quick, yet deeply flavored soup. I was extra hungry for dinner one night and accompanied the soup with a Spa Crunch Salad on the side. It was a great meal!
