Meal Plan // Week of October 7, 2024

Friends and family – I hope this finds you doing well and getting through the heat wave that seems to be affecting so many of us, especially out west.  It appears there is some relief on the way.  Other parts of the country are still dealing with hurricane devastation and uncertainty with each new day. I hope you are finding kindness in complete strangers –  there’s no shortage of helpers out there.

Southwest Chicken and Vegetable Soup
It’s my turn to cook dinner for the beloved priests of our parish and I’ve decided to bring them this soup with all the toppings.. as well as a side of cornbread, fresh fruit and, of course, a fall muffin treat for the morning. Happy they can have the night off cooking!

Ratatouille
We will enjoy a batch of ratatouille several ways this week – a few meals for breakfast with eggs and one will be for a quick dinner. Warm vegetables tossed with penne pasta, feta cheese and toasted pine nuts will be a super simple meal after a busy day.

Lemony Feta Turkey Meatballs
A Food Family Friends favorite, not to mention a hit with the Shoup household! I’m making a double batch this week and planning for leftovers to help out with a particularly scheduled week. Serve with a side of green beans and farro.

We are having an elevated grilled cheese sandwich for dinner this week – such a fun midweek treat! Pair with an arugula salad with sliced pear, toasted pecans and a champagne vinaigrette for a delicious, comforting dinner.
