Meal Plan // Week of October 14, 2024

It’s already mid-October and I finally feel like the weather is allowing me to make some cozy food and put out some fall decor around the house.  Maybe it’s the same in your neck of the woods? Side note – not to offend anyone, but I’m not a big fan of anything Halloween related, and really neither is anyone in my family so I happily stick to greenish and white pumpkins on my porch – no black and orange decor around here! 

As for our meal calendar this week, it’s full of nutritious, often make ahead food that I feel good about eating and serving my family. Taking a bit of time on the weekend makes a huge difference and ensures the groceries are purchased and in our refrigerator – that sometimes feels like half the battle!

A hearty salad is often part of my weekly dinner meal plan. This is our go to salad at Sweetgreen and easy to make at home. Nutritious, a variety of textures and flavors, and perfectly fall.

Sweet Potato Chickpea Buddha Bowl
I’m not going to lie – my teenagers are not likely to eat this bowl as written. More likely, they will put parts of this bowl on a plate, happily eat that, and then go to the garage freezer and grab a bag of Bare spicy chicken strips or a Trader Joe’s frozen pizza. That’s perfectly fine with me! Exposure, exposure, exposure and I’ll be happy they got a good dose of fiber and healthy fats.

Roasted Grass-fed Beef Meatballs
Pulling these from the freezer this week! Baked from frozen and then warmed in Rao’s marinara sauce, it couldn’t be an easier meal for my teens to put together themselves. Serve with a side of broccoli.

I need an easy crockpot meal this week and this one is a tasty recipe. We will be serving this with a side of steamed green beans drizzled with olive oil and steamed rice.

A childhood favorite and now a Shoup fall staple for my family and friends. It’s recipes like these that will end up in my cookbook one day! I’m so excited to bring a batch to one of my favorite people this week.
