Meal Plan // Week of October 21, 2024

This week’s meal plan has a mix of fall flavors and easy weeknight dishes.  A few easy skillet meals and satisfying salads will get us through the week. I’m also going to make a batch of my Morning Glory Muffins for a quick grab and go snack – I hope you try these and love them as much as we do!

Ground Pork Skillet with Mushrooms, Cabbage and Cashews
This is a super quick, adaptable skillet meal that my whole family loves. I often change up the variety of mushrooms as well as the protein from pork to ground chicken thigh. My kids like this over steamed rice and my husband and I prefer this over a pile of arugula – we all enjoy a good drizzle of sriracha sauce. Don’t skip the chopped cilantro – it’s a good source of vitamin k and not just for garnish!

A flavorful, easy salad that gets compliments from my teenagers when I make it. In fact, I can make just about anything with honey mustard and they will enjoy it. Cherry tomatoes from the grocery store makes this easy to make year round.

Brussel Sprout Salad With Persimmons – What’s Gaby Cooking
We love persimmons in my house! The minute I start to see them at the market I buy them and don’t stop until they are gone for the season. We mostly eat them sliced like apples but we love to add them to salads and as an appetizer with a bowl of warm spiced nuts. I’m planning to make this salad for dinner this week but leave out the candied pecans. I’ll serve with a slice of toasted Heavily Seeded Bread and a cup of soup.

We just served this soup when entertaining a few days ago and I’m so happy we have some leftovers! For a quick weeknight meal we will have this soup with the Brussels Sprouts salad and Seeded Bread.
