Fall is marching right along, the holidays are around the corner and I’m counting the days until our daughter comes home from college. I’m planning on all the meals and treats I can stuff her with (and her friends!) while she’s home… Until then, I’ll continue to nourish my hubby and boys with meals to get them through these busy fall weeks. This upcoming week look particularly hectic, especially in the evenings. Planning ahead is key because everyone still needs to eat!

This is such a tasty quick meal to throw together in the morning and let it cook all day. We will make rice bowls with roasted brussels sprouts, quick pickled cucumber and red onion and a drizzle of sriracha. Leftovers are delicious!
