This is one of my favorite little desserts to keep in the fridge when I want something sweet but don’t want to overdo it. You can easily double or quadruple the recipe and have them ready to grab whenever the mood strikes.

Greek Yogurt Peanut Butter Cup
Ingredients
- ½ cup Whole milk Greek yogurt, plain
- 1 tbsp peanut or almond butter
- ¼ banana, diced
- ½ tsp maple syrup
- ¼ tsp vanilla extract
- 1 tbsp chocolate chips I like Hu Chocolate
- ¼ tsp coconut oil
- flaky sea salt
Instructions
- In a small mixing bowl, add the yogurt, peanut butter, banana, maple syrup, and vanilla. Mix until combined. Pour into a small ramekin.
- In a glass measuring cup, add the chocolate and coconut oil. Microwave in 20-30 second increments to melt, stirring in between.
- Pour over the yogurt in an even layer. Sprinkle with flaky sea salt and refrigerate for about 30 minutes or freeze for 10 minutes, just until the chocolate is set and the yogurt is cold.
