Asian-inspired Roasted Chicken Thighs

Quick and Flavorful Asian-Inspired Marinade

This flavorful Asian-inspired marinade is easy to throw together and can marinate overnight or in as little as 1 hour. To make things even quicker, I often get help from Trader Joe’s—they have frozen garlic and ginger cubes that you can pop right into the marinade.

Trader Joe’s Soyaki Sauce: A Quick and Healthy Option

If you’re really in a hurry, I have another option that’s healthier than takeout: Trader Joe’s Soyaki Sauce! It’s in a bottle and so easy to pour right onto chicken thighs. It’s so delicious, and although it uses an oil that is not my top choice, it’s much healthier than takeout and a great option in a pinch. I always keep a bottle in my pantry. This is my idea of “fast food.”

Easy Meal Prep for Busy Evenings

Adding a vegetable or two like asparagus, snap peas, broccoli, green beans or winter squash as well as some cooked rice or farro makes for a very easy meal. It’s often on my meal calendar for busy evenings when everyone is going in different directions. Roasting, grilling or using your air fryer is the best way to get these thighs nice and crispy.  Doubling the recipe is not a bad idea either.  Leftovers can always get wrapped up in a whole grain lavash wrap with arugula, roasted red peppers and sriracha sauce similar to this wrap!

Soyaki Roasted Chicken Thighs

This is an easy flavorful marinade to throw together for a great weeknight meal. With the help from frozen cubes of ginger and garlic, this can take just a few minutes. Pair with any veggie you have on hand and scoop of cooked rice or farro – consider adding a drizzle of spicy sriracha!

Ingredients

  • 1 tbsp honey
  • ¼ cup reduced sodium soy sauce use tamari for gluten-free option
  • 2 tsp toasted sesame oil
  • 1 tbsp rice wine vinegar
  • 2 tsp fresh minced ginger or 2 cubes of frozen ginger from Trader Joe's
  • 2 tsp fresh minced garlic or 2 cubes of frozen garlic from Trader Joe's
  • pinch red pepper flakes
  • 2 lbs boneless skinless chicken thighs

Instructions

  • Add all ingredients except the chicken to a large bowl and whisk together. Add the chicken and flip to coat. Cover and refrigerate for 1 hour or overnight.
  • Preheat the oven to 400℉ and line a rimmed sheet pan with foil. Drain the marinade off of the chicken and add to the prepared sheet pan. Roast for about 40 minutes, turning the chicken over mid-way. You're looking for chicken that is crispy in spots and the internal temperature reads about 180 ℉ for tender and juicy thighs.
    Alternatively, you can use an air fryer at 400 ℉ and cook for about 15 minutes or until cooked through and crispy.
