We all know the saying, “A smoothie a day keeps the doctor away.” While that might be a bit of a stretch, I can certainly vouch for the health benefits of my daily smoothies. Over the years, I’ve upped the nutrient content, and it’s made a world of difference. I’m fuller for longer and free from those pesky sugar roller coasters. Plus, it’s a quick and easy go-to that takes just two minutes to prepare.

Lately, I’ve been loving my new creation: the Pistachio Nut Protein Smoothie. It’s a delicious twist on my usual recipe, and simply swapping out the nut has transformed it into something entirely different.

A few weeks ago, I quietly placed this smoothie on my husband’s desk while he was on a work call. Usually, he’s grateful but expects another smoothie in varying shades of green, brown, or purple. (Let’s face it, blueberries and spinach can make some strange colors!) But this smoothie? A beautiful, soft shade of green, like a mint milkshake or a matcha green tea latte.

The Nutritional Power of Pistachios

The secret ingredient? Pistachios! They make this smoothie so creamy, you won’t believe it’s healthy. Pistachios are packed with protein, healthy fats, and fiber, which are fantastic for keeping you full and stabilizing your blood sugar levels. Pistachios are a great source of fiber and healthy fats as well as high in vitamin B6 and potassium. They also add a rich, nutty flavor that’s simply irresistible.

To boost the nutrients even further, I add a generous handful of spinach, frozen cauliflower and a couple of scoops of chia seeds. These ingredients are virtually tasteless in a smoothie but bring enormous health benefits. Spinach is loaded with vitamins and minerals, the cauliflower is fiber-rich and the chia seeds are a great source of omega-3 fatty acids and fiber. Together, they help keep you satisfied for hours.

Ingredients

  • 1 cup unsweetened macadamia milk unsweetened almond milk is a good option
  • 1 scoop vanilla protein powder I like Be Well By Kelly brand
  • ¼ cup raw pistachio nuts
  • 1 tbsp chia seeds
  • 1 big handful fresh spinach
  • ¼ cup frozen riced cauliflower
  • 4-5 ice cubes
  • 1 tbsp flax meal
  • fresh mint optional

Instructions

  • Blend all ingredients in a high speed blender until smooth.

    I loved the pistachio taste of this smoothie. I wasn’t so sure about adding the cauliflower but I didn’t taste it at all and it was great to get some more veggies in for the day.
